3 egg whites
1 c. sugar
20 Rita Crackers crushed to a fine crumb
1 c. chopped pecans
1 t. vanilla extract
1 t. baking powder
1 c. ½ pt.) whipping cream: Whip until stiff and keep in refrigerator until needed
Preheat oven to 350 degrees. Butter a glass 9 inch pie plate and set aside. Using an electric mixer beat the egg whites until stiff. Fold in the sugar in 3 additions. Fold in the Ritz Cracker crumbs, then the pecans, vanilla and baking powder. Turn batter into the prepared baking dish and evenly smooth the top.
Bake in a preheated 350 degree oven for 30 minutes, remove from oven and let cool. Pie will be puffed when it comes out of the oven and will fall as it cools.
Spread top of pie with whipped cream and serve or keep in refrigerator until ready to serve.
